Spring Focaccia Sandwich

The perfect elevated lunch using the new Brightland x Hill House set. Don’t sleep on the chili oil strawberries!!

Ingredients

  • Focaccia bread
  • 3–5 Large strawberries
  • Fig jam
  • 1 ball of burrata
  • 1/2 radish
  • 1/2 red onion
  • 1/2 lemon
  • 1/2 cup arugula
  • 1/3 cup pistachios
  • Salt + pepper
  • 1/3 cup basil
  • 1/2 chopped garlic
  • Brightland Awake Extra Virgin Olive Oil
  • Brightland Ardor Chili Olive Oil
  • Optional: sprouts 

Instructions

For the Pesto:

  1. Blend basil, arugula, juice from 1/2 lemon, pistachios, chopped garlic, salt and pepper, olive oil until well combined.

For the Marinated Veggies:

  1. Slice radish, red onion, and strawberries
  2. Cover them in Ardor Chili Olive Oil and season with salt and pepper.

Assembly:

  1. Slice your focaccia bread.
  2. Spread a layer of spicy fig jam.
  3. Add the lemon arugula pistachio pesto.
  4. Layer on the marinated radish, onion, and strawberries.
  5. Add burrata and more fresh arugula or sprouts. 
  6. Finish with a crack of black pepper.
  7. Drizzle with a little extra Ardor.
  8. Serve and enjoy your fresh, flavorful sandwich!
