Creamy Lemon Miso Cashew Spaghetti

Creamy, citrusy, and deeply savory, this Lemon Miso Cashew Spaghetti pairs Banza's Gluten Free Spaghetti with a silky cashew sauce with Brightland Rosette Olive Oil. Topped with red onions marinated in Brightland Aurora from the Winter Flavor Duo, it’s a bright, cozy bowl that delivers layered flavor in every bite.



Ingredients

  • 1/4 cup raw cashews, soaked in boiling water for 20 minutes and drained
  • ½ cup water
  • Zest of 1 lemon
  • Juice of 1 medium lemon
  • 1 clove garlic
  • 1 tablespoon white or mellow miso
  • 1 teaspoon maple syrup
  • 2 tablespoon nutritional yeast
  • 1 tablespoons Brightland Rosette Garlic Flavored Olive Oil
  • 1/2 teaspoon salt, plus more to taste
  • Banza Brown Rice Spaghetti

To Finish:

  • Fresh parsley, finely chopped
  • Very thinly sliced red onion marinated in Brightland Aurora Rosemary Flavored Olive Oil, salt and pepper
  • Chili flakes (optional)
  • Lemon zest

Instructions

  1. Bring a large pot of well-salted water to a boil and cook the Banza spaghetti according to package instructions until just al dente. 
  2. While the pasta cooks, place the very thinly sliced red onion in a bowl of ice-cold water and let soak for about 10 minutes to mellow its bite. Drain well, then toss with a drizzle of Aurora Rosemary Olive Oil and a few cracks of black pepper. Set aside to lightly marinate while you finish the pasta.
  3. Add the soaked and drained cashews to a high-speed blender along with the lemon zest and juice, garlic, miso, maple syrup, nutritional yeast, Rosette Garlic Olive Oil, water and salt. Blend until completely smooth and creamy, scraping down the sides as needed. Set the sauce aside.
  4. Pour the sauce in a wide skillet over medium low heat, tossing gently to coat. After a few minutes the sauce should thicken and coat the noodles beautifully. 
  5. Finish with a generous shower of fresh parsley, lemon zest, a scattering of the marinated red onion, a pinch of chili flakes if you like heat. Serve warm and enjoy! :)
